BANANA AND CARROT CINNAMUFFIN
- 1 cup flour
- 1 cup FUTURELIFE® Smart Oats® and Ancient Grains
- 1 teaspoon bicarb
- 1 1⁄2 teaspoons baking powder
- 1⁄4 cup sugar
- 50ml honey
- 1⁄4 cup vegetable oil
- 1 teaspoon vanilla essence
- 2 eggs
- 1⁄2 cup milk
- 1⁄2 cup shredded carrot
- 1⁄2 cup shredded apple
- 4 small very ripe bananas
- Handful of dried cranberries
- Mix first four dry ingredient together in a small bowl.
- Blend bananas, oil, sugars, eggs, milk, and vanilla
- Add the wet mixture to the dry mixture until well combined.
- Add apple, carrot and cranberries to mixture.
- Divide into 12 in a greased muffin pan
- Bake at 190°C for 18 minutes or until dry in the middle.
